I'm tempted to try it next time I have half a package of wonton wrappers left over (the spell checker wants to change that to 'wanton'. It obviously knows me too well.)

Along the lines of wonton wrappers, I'd never thought of using them for ravioli, but it makes sense. I'd make a lot more ravioli if the dough didn't take so long. I'm going to try Sweet Potato Ravioli sometime next week, after I go shopping.

This weekend, the plan is to hit the farmer's market Saturday morning and get my knives sharpened. Apparently, there's a guy who shows up and does them on the spot, and my friend said he does an incredible job. My knives are amazingly dull - they've never been sharpened in the 3+ years I've had them, mostly because I never found anywhere good to take them that wasn't going to take a week.

The latkes last night were amazingly good. I'm not sure sour cream was exactly the right topping - I'm considering something more like a maranara sauce next time. Also, they would have been better with a dash of red pepper in the batter. Or maybe just some roasted peppers in the sour cream, like I do for tamales.

Tonight: a pound of ground beef, mixed with some onion, breadcrumbs, and an egg, formed into round patties, with a strip of bacon around the outside, then grilled. Maybe with biscuits, if I get home early enough.

I should. But it's one more thing that takes up space, and has to be maintained, and I'm trying to reduce the number of those in my life. I don't think it's worth it for something I'd use once a year.

What I really need is a friend with a 1000 grit waterstone. :)

Scott thought he was the greatest knife sharpener ever, and he's way pickier about his knives then I am, so I expect good thing. Here's his URL:

Yaay for cast iron cooking. I sometimes think I'm the only person on the face of the planet who has an arsenal of cast iron cookware that could overweight a 747, but I love the stuff.

As for knives, we have a good old-fashioned bell-ringing knife sharpening truck that passes through our neighborhood about once every six months. I can't say I've ever needed his services, but I know he's coming eventually if I did.

I'm up to 3 cast iron skillets and a cast iron dutch oven. I use the skillets a lot, but mostly for cornbread, because it would be an abomination to make cornbread in anything else.

I didn't know real mobile trucks like that existed. Maybe it's a Canadian thing?

I've got 5 skillets (in every size from a single-egg to a jumbo one that weighs about 20 pounds) as well as a griddle.

I'll never go back to anything ever again.

As for the sharpening trucks, perhaps it is a Canadian thing..dunno. I do remember them all through my childhood as well, so it's nothing new around here - when you hear a bell tolling slowly down your street you know the knife-guy is in town. :)

I have just one cast iron pan (left behind by the previous owner of my house) and it gets used nearly every day. Usually for breakfast things like bacon or kippers, and occasionally for dinner things like steak.

Sure. Thursday works well for us since the parents are leaving for Florida that day.
