Pork

I got my second delivery box of meat from Jolie Vue today. A very nice chicken, some steaks, some sausage, a beautiful beef liver that I'm probably going to give to my mother, and several roasts. One's called a "Pike's Peak Roast" - I've never heard of that before.

And some uncured bacon - pork belly. The email said to get a grill really, really hot, cut it into chunks, and cook it until the fat was crispy, possibly with BBQ sauce. I'm thinking maybe a rub would work well too. It looks very interesting.

Anyway, tonight we grilled the pork chops from last month's batch. Mike just salted and peppered them and put them on the grill. I'm not a big pork chop fan, but these were incredible!

I hate to say this, but that actually may be too much fat. And I'm not squeamish about fat!
